Inspired by the colors of the precious stone, Emerald

This bonbon is inspired by the colors of the precious stone, Emerald. We molded the bonbon with La Esmeralda dark chocolate couverture and wanted to give the bonbon the same colors of the stone.
A spray gun was used to create a droplet effect. When you taste the chocolate, subtle notes of balsamic awaken your taste buds, and that is why we paired it with Sansho, which is a Japanese pepper, and with fresh rosemary.
