Cardamom infused chocolate bar

A chocolate with a unique aromatic profile

I found my inspiration for this tablette thanks to the subtle note of balsamic in this Rare Chocolate.  I sublimed it by infusing it with cardamom leaves.

I first melted the chocolate, and then sealed it in a bowl with crushed green cardamom. It was kept in a warming device at 40°C for 48 hours.

The result is a chocolate with a unique aromatic profile with subtle notes of cardamom.
