6th International Gourmet Chef Seminar Milan 20-22nd June

Following a grandiose opening ceremony of the new Chocolate Academy™ center in Milano on the 19th of June, all our Gourmet Chefs were invited for a 3 days Chef Seminar in Milan.

41 Chefs from 22 different countries flew over for this 6th edition, including many new joiners and also passionate Chefs that have been part of the Gourmet community for more than 20 years.

This is the only moment in the year when our Gourmet Chefs are all together, which represent a great opportunity for them to share best practices and learn new techniques, and of course strengthen even further the Gourmet Chef community feeling.

The first day was an immersion within the Chocolate Academy™ playbook to leverage synergies between the Chocolate Academy™ centers. This was followed by intensive sessions with the Cacao Barry brand managers to leverage the involvement of the Chefs in the brand strategy for the coming year.

After this full on day, guests could enjoy a delicious cocktail dinner by Davide Oldani: a famous Cacao Barry Ambassador.

On the second day, Chefs participated to a highly technical carrousel. The first workshop focused on Free From Dairy and Gluten animated by Anne Cazor from Scinnov ( Doctor in Molecular Gastronomy and Food Engineering), and the external Chef Rodolphe Landemaine who developed a vegan bakery and pastry range. Indeed this major trend is observed across the continents and represents a challenge for the pastry of tomorrow. The second carrousel found naturally place in the Chocogelato Lab, where our expert Paolo Cappellini immersed our Chefs within this developing segment. And last but not least: Davide Comaschi (winner of the WCM final in 2013) and Alberto Simionato (Chocolate Academy Chef in Italy), shared the secrets of a local classic: the panettone.

Then after a brainstorm on creating the decorations of tomorrow, the group enjoyed the visit of Eataly: a food store dedicated to local products, and a walk towards the symbol of Milano: the famous Duomo. The day was concluded brilliantly at La Rinascente roof top with a breath taking view over the roof of the cathedral.

Finally the third day was all about creativity. After a presentation of the Colours of Tomorrow by Judith Van Vliet (VP Communications & Public Relations of Colour Marketing Group), half of the Chefs paired in teams to re-create unique creations inspired by trends in the three labs of the Academy. During this time the other half got immersed in possible future scenarios of bakery and pastry shops animated by Laura Alibani (Global CMI Manager Gourmet).

The results were extremely tight as all Chefs did really high level desserts, but in the end the best team award went to:

  • Sanger, Fabian (Switzerland)

The day was closed with a cocktail and a touching video with all the participants wishing the best of luck to the Italian team for their new Academy.

Next year the seminar will move to Asia for the first time, as Shanghai has been elected host of the 7th edition in June 2018!
