The creation of a tasteful and flavorful dessert
The name of the new Cacao Barry chocolate ‘La Esmeralda’ refers to the Spanish name of the plantation which it comes from. It is spelled “Emerald” in English.
"I tend to imagine polished precious stones when I read “Emerald”. But then, I picture the rough stone. It is this rough stone that I wanted to re-create through my dessert.
Once the idea was in my head, I thought of the slightest details that will bring this dessert as close to the reality as possible. From the conception of the mold in the shape of a stone, to the final touch which gives him a real aspect of a jewel, I also wanted to create a tasteful and flavorful dessert." Ramon Morato
