250 g flour
60 g cocoa powder

 

Lemon coriander Praliné feuilleté

Preparation Ingredients
Roast 15 g coriander seeds
Grind to obtain a fine powder
Add 500 g Pralin Feuilletine™
12 g half candied lemon zests

 

Chocolate Ganache

Preparation Ingredients
Bring to a boil 210 g liquid cream
35 g butter
50 g lavender honey
Pour at 80°C over 200 g dark couverture chocolate Plantation Madirofolo 65%
50 g milk origine couverture Origine Ghana
Mix, pipe.

 

Decoration

Chocolate flowers, gold powder.
