Fondante chocolate cream

Preparation Ingredients
Poach at 85°C 350 g whole milk 
280 g liquid cream 35% fat
70 g double cream 
105 g egg yolks 
140 g granulated sugar
Sieve over 300 g dark chocolate Chocolat Amer
60 g milk couverture Ambre Java

Mycryo® pistachio cream

Preparation Ingredients
 Prepare a custard with 100 g whole milk 
35 g egg yolks
65 g sugar
15 g custard powder 
Afgter cooking, add 35 g Mycryo® cocoa butter 
40 g green pistachio paste
At 30°C, add 240 g whipped cream
