Sauteed Cod with Spices and pan fried Vegetables

Ingredients:

Maxime Potatoes

Preparation Ingredients
Thinly slice the potatoes
Lay them out in a rosette  
Brown in  hot Mycryo® cocoa butter

Pan fried Vegetables

Preparation Ingredients
Blanch some green vegetables
Leave to cool  
Pan-fry the oyster mushrooms
Coat the vegetables with rehydrated Mycryo® cocoa butter
Pan-fry in a wok all the vegetables
Season with Szechwan pepper

Sauteed Cod

Preparation Ingredients
Mix Mycryo® cocoa butter 
the breadcrumbs
the star anise
the chopped Gruyere
Apply to the back of the cod  
Put to one side cold  

Vinaigrette

Preparation Ingredients
Reduce the juice of the citrus fruit
Add the balsamic vinegar
Emulsify with Mycryo® cocoa butter
