Ingredients:

Scallops Planche

Preparation Ingredients
Dredge the scallops with Mycryo® cocoa butter
Color on the grill, 1 minute each side  
Put to one side  

 

Caramelized Endives

Preparation Ingredients
Take the leaves off the endives
Cook until pale some brown sugar
Mycryo® cocoa butter 
Add the leaves
Deglaze with beer
Cook for 2 minutes  

Cresson Emulsion

Preparation Ingredients
Blanch and leave to cool the cress
Reduce to a mash with Mycryo® cocoa butter
Heat the cream and the fumet
Add the cress butter
Emulsify
