Sauteed Foie Gras à la banane

Ingredients:

Cacao Emulsion

Preparation Ingredients
Heat the poultry stock
Glaze it  
Fold in the cocoa 
the 4 spices
Emulsify with Mycryo® cocoa butter

Sauteed Bananas

Preparation Ingredients
Cut the bananas into 2 cm rounds
Make a caramel with brown sugar 
Mycryo® cocoa butter
Coat each round for a few minutes  
Prepare skewers with 3 rounds 
half a  vanilla pod

Sauteed Foie Gras

Preparation Ingredients
Cut the foie gras into scalops
Season and coat with Mycryo® cocoa butter
Put to one side cold
Sauté each side for 45 seconds  
Put to one side hot  

Tuile grué de cacao

Preparation Ingredients
Melt some Mycryo® cocoa butter
Fold inthe elements
Leave to stand for 30 minutes  
Spread out on baking paper and cook it in a hot oven  
Mould at will
