Tea collection: Matcha tea Ocoa™

Matcha is a ground green tea used in Japanese tea ceremonies. Matcha tea comes from the leaves of tea that is grown in the shade, which are ground and steamed. The preparation for making matcha starts before the tea is harvested. The tea leaves are covered to prevent direct sunlight from reaching them. This shading process makes the leaves darker and causes changes in the chemical composition of the leaves, which leads to amino acids forming and higher levels of caffeine than are found in other teas. These leaves are later dried, their stems and veins are removed and they are ground.
