Soy sauce’s origins have been traced to China. It has always been popular in Asian cuisine and nowadays its popularity has spread across the world. Traditionally it is used as a condiment to accompany a range of dishes. However, due to its flavour characteristics, soy sauce also pairs extremely well with other ingredients commonly used in the confectionary world. Items such as toasted nuts, coffee, cinnamon, caramel, dark chocolate, liquorice and some fruits like strawberry, blackberry and coconut all pair well with soy sauce. In this new bulletin, we will look at some recipes where soy sauce plays the leading role and others where it accompanies other main ingredients. In these recipes it is used as a flavour enhancer to round off some desserts with its umami notes or in toffees to bring a contrasting salty flavour.
