Looking forward to the UK & Ireland pre-selections for WCM 2017 with Stephen Espouy

Six great, super talented pastry chefs and chocolatiers will this year compete in the UK pre-selection for the international competition of the World Chocolate Masters (WCM). The competition is just around the corner, so we are checking how the preparations are going.  Today we are talking to Stephen Espouy.

There are only a few weeks to the UK WCM. How do you feel?

I am excited to see how the other contestants will interpret the theme, and I hope that all goes well on the day.

How are your preparations going?

The preparations are going well, however I still have lots to do. I will definitely be preparing right up to the date.

What is most challenging?

I think that the theme can be interpreted in many ways, I found it challenging to find something that would tie it all together.

What was easier than you thought?

I am happy with the snack to go, it translated very well from idea to reality.

Are you getting lots of support from your colleagues and other people? Is there anybody you would especially like to thank?

I have had great support from the Britannia team and everyone has been extremely helpful.   However, special thanks go to my wife, who works extremely hard to support me.

Are you enjoying the theme Futropolis?

I have to admit that I had to change ideas many times, especially for the sculpture, until I finally found something I could really go with.

How is it inspiring you?

It has made me really consider ingredients, shapes and methods.

What is your vision for the future of desserts?

I like the idea of fresh flavours even if that means simpler looking desserts.  The Futropolis theme has made me think a lot about where we are now, and where we are heading. I hope to see us adapting to nature rather than the other way around.

Is there anything in the pastry world today that you dislike?

I always like to see new trends, and I think the more diversity there is the better.


What have you learnt through your journey in this competition?

I have definitely learnt more about Cacao Barry and their delicious lines of couvertures.
