Mix all ingredients to make a marmalade. Cool down.
Ganache Gianduja

Preparation: Ganache Gianduja
Mix and boil cream and buckwheat honey. Pour onto Cacao Barry chocolate.
Balsamico Gel
Used products: Balsamico Gel

100 ggranulated sugar

100 gglucose syrup
- 
100 graspberry puree
- 
100 gbalsamic vinegar
- 
10 gsorbitol
Preparation: Balsamico Gel
