I used oats which are rich in iron, calcium, phosphor, magnesium, potassium and many other minerals. I also did not put in a lot of sugar. I created a well-decorated puff pastry that contains a good taste with a chocolate delight. Puff pastry for elderly people It is said that a lot of sugar causes diseases especially for the elderly people. Since I am a pastry chef, I wanted to create a recipe that contains sweet and savory but in a healthy way. I used in this recipe coffee beans and semolina sugar and cheese to have balance and become a permissible delight.

Puff pastry

    milk
  • 250 g
    water
  • 225 g
    butter
  • 4 g
    salt
  • 20 g
    sugar
  • 325 g
    flour
  • 7 g
    eggs

Preparation: Puff pastry

Step 1. Boil the milk, the butter, the water, the sugar and salt
Step 2. Add the flour into the mixture
Step 3. Add the eggs
Step 4. Mix then put in the piping tube and the oven ( 170°C for 12min)

Dark chocolate cream

Used products: Dark chocolate cream

Preparation: Dark chocolate cream

Step 1. Boil the milk, the cream and glucose
Step 2. Add to the chocolate and mix until emulsion
Step 3. Add the chopped hazelnut in the mixture

Crispy oats

Used products: Crispy oats

Preparation: Crispy oats

Step 1. Cook the oats in the oven at 160°C for 10min
Step 2. Melt the hazelnut praline, the butter, the cacao buter and the chocolate together
Step 3. Add the dates and the oats

Pastry cream

Used products: Pastry cream

  • 375 g
    milk
  • 375 g
    cream
  • 225 g
    Egg yolk
  • 225 g
    sugar
  • 60 g
    cream powder
  • 2 g
    orange zest
  • 50 g
    butter

Preparation: Pastry cream

Step 1. Whisk the egg yolks with the sugar and the cream powder
Step 2. Boil the milk and the cream
Step 3. Pour the eggs in the boiled milk and cream
Step 4. After 1 min of emulsion, add the butter

Coffee creamy

Used products: Coffee creamy

Preparation: Coffee creamy

Step 1. Infuse the coffee into the cream
Step 2. Whisk the egg yolks with the sugar and cream
Step 3. Boil the infused cream with the milk
Step 4. Add the whisked eggs to the infused cream
Step 5. Pour on the milk chocolate
Step 6. Add the butter and mix until emulsion

Assembly and finishing

Assembly step 1. Divide the puff pastry in 3 parts
Assembly step 2. Pipe the different types of cream in their puff pastries, respectively
