Ten minutes with Arnaud Bignon, chef at The Greenhouse
Arnaud Bignon, who is living and working in London since two years, has made his name in Greece, at the two Michelin starred restaurant Spondi, which ranked 69th at the World’s 50 best restaurants list in 2011. Greenhouse is his second two Michelin starred restaurant.
Arnaud was born and educated in France, but his curiosity took him into the wide world to learn from some of the best chefs. He felt in love with cooking already as a child when he admired the great products cultivated by his grandfather and enjoyed the lovely meals prepared by his mother.
How would you introduce yourself?
I am Arnaud Bignon, the head chef of the Greenhouse restaurant Mayfair and milk chocolate lover
What is your secret desire/ambition?
To be better tomorrow than yesterday.
What is your ultimate dream?
To sleep for 2 days non stop.
What is your greatest achievement?
To have obtained 2 Michelin stars in 2 different restaurants.
What/who is inspiring you?
Life inspires me, the products and the web.
What do you love most about your work?
I love to give pleasure to our guests and to receive it in return.
What are your favourite flavours?
I love herbs, ginger, fish and the natural acidity of the products.
How is your relation to chocolate?
I love milk chocolate to eat on its own and dark chocolate with a coffee or a cigar.
Which chocolate desserts are on your menu, which of them is your favourite and why?
We have only 5 desserts on the menu and one of them is a chocolate dessert. It is milk chocolate with caramel cream, vanilla creme brulee and crunchy praline, served with a chocolate ice cream.
What was the best chocolate dessert that you have eaten and where?
It was the “Priceless Nyangbo Chocolate” at the restaurant Epicure at the Hotel Bristol Paris made by Laurent Jeanin. It was just gorgeous.
