Overall flavour profile is earthy and nutty with lots of seed and nuts. Fleur de cao brings a little floral taste. Maple and dates give a perfect balance of sweetness with earthy flavor from buckwheat and oats.  Being a Type 1 diabetic and an avid hiker, there was always a personal need for a snack that can provide energy and also be healthy. This bar is inspired by a brownie I made on one of my back-country hikes, using just a couple pots and a few rocks. The choice of Ontario-grown peanuts is to support the local farmers while utilizing a plant that is excellent for crop rotation and adding nutrients back to the soil, with the excess supply being turned into peanut butter, a healthy fat. Since it is a bar, it is easy to consume on the go and with no cutlery, and is the perfect mix of fibres and fats with it's oats, nuts and seeds to provide that healthy boost of energy.

Caramelize

Fold

Caramelize the oats and maple together in oven at 300F until crunchy 
Ground the dates in a robocoupe to a fine paste and then add peanut butter and mix. 
Fold in pumpkin seeds, sunflower seeds and caramelized oats.

Buckwheat Brownie

Hydrate

    Coconut sugar

Mix everything to make batter. Spread onto a sheet tray

Bake at 325F for 15 mins.
