Looking forward to the UK & Ireland pre-selections for WCM 2017 with Sarah Frankland

Six great, super talented pastry chefs and chocolatiers will this year compete in the UK pre-selection for the international competition of the World Chocolate Masters (WCM). The competition is just around the corner, so we are checking how the preparations are going.  Let’s start with the only lady within this year’s selection: Sarah Frankland.

 

There are only a few weeks to the UK WCM. How do you feel?

It hasn’t hit me yet that the competition is so close, so I feel fine - just pushing on with practice.

How are you preparations going?

I am focusing on keeping calm and zen and working through all the different elements; training and practicing as much as I can, so I can do my best.

What do you find most challenging?

Everything has been a challenge as I am pushing myself to create the best chocolate elements that I can.

What went easier than you thought?

Nothing is easy as I am constantly trying to improve each element to perfection.

Are you getting lots of support from your colleagues and other people? Is there anybody you would especially like to thank?

I have an amazing pastry team who are of a brilliant support! I couldn’t do this without them. A very special thanks to my brother who has been working on one element with me.

Are you enjoying the theme Futropolis?

It is a theme that leaves a lot open to imagination and personal interpretations. I hope that my interpretation will be understood well by the judging panel.

How is it inspiring you?

My thoughts run from the basic elements of our lives, nature and ensuring that what keeps both us and plants alive is remembered. It doesn’t matter how advanced we get with technology, we cannot live without nature. Both elements must be advanced in harmony.  

What is your vision of the future of desserts?

Simplicity of flavor and understanding all the elements of taste. Also - seasoning in desserts is as important as in the savoury kitchen.

What have you learnt through your journey in this competition?

I have learnt many things, as always with a competition, it’s hard to list them all.

Are you ready to win?

I am just looking forward to showcasing my preparations on the day. I try to not think further than just creating the elements to the best of my ability.
